Scallops With Bacon Spinach

Everything is better with bacon • Serves 2-4


1 to 1/2 pounds sea scallops (about 16)
3 slices bacon
Kosher salt
Black Pepper
4-6 cloves garlic chopped
1 Cup Onion chopped
12 oz. Baby Spinach

Cook bacon until crisp. Remove bacon from pan, reserving 1 tablespoon drippings in pan. Turn heat to high. Salt and pepper the scallops. Add scallops to pan once smoke starts to rise from pan. Make sure scallops don’t touch each other. Sear for 1 1/2 minutes on each side. Scallops should have a golden crust on each side but be translucent at the center. Transfer scallops to a plate and keep warm. Reduce heat to medium high, sauté onions and garlic stirring frequently. Add half spinach, cook 1 minute stirring frequently. Add remaining spinach and crumbled bacon and cook until spinach is just wilted. Season with salt and pepper. Serve scallops on top of a bed of the spinach.
