This traditional New England Smoked Blue Fish made by Fox Seafood Inc. is a favorite among locals here in Rockport.
The process is started with fresh whole Bluefish and carefully filleted and portioned by hand.
In total the process takes 3 days from start to finish. The fish is “Hot Smoked” in small batches. “Hot smoked” fish are roasted while they smoke and fully cooked to an internal temperature of 145 f for a minimum of 30 minutes resulting in a flaky texture.
