Halibut is a lean, sweet-tasting white fish.Caught locally near Rockport May through June. The best time for year for Halibut. The rest of the year it is coming from further offshore in the Gulf of Maine.

Preparation

Can be pan fried, broiled, poached, baked, or grilled (our favorite). Because it is so lean it is prone to overcooking. Halibut is ready to eat when the meat is opaque through the middle. For a 1″ Halibut steak cook for approximately 10 minutes flipping it once. For a Halibut fillet cook for about 6 minutes.

Storage

Can be stored covered in refrigerator for up to 6 days. Can be frozen and stored for up to 6 months. Freezing will cause the Halibut to be drier than fresh.
