Never soaked or treated, our 100% natural scallops offer fresh sea flavor and nearly translucent meat with a creamy appearance. So fresh they can be eaten raw as Sushi. The flavor is sweet, ranging from mild to salty, with a delicate yet firm texture, and when cooked should have a seaweed-like scent.
Scallops are quick-cooking shellfish, so it’s key not to overcook them or they’ll dry out and become rubbery. Generally, sea scallops take between 3 and 5 minutes to cook. How to know when scallops are done cooking? They’ll be golden brown on both sides, just-firm at the edges and opaque and succulent in the center.
We offer a variety of sizes to best suit your use:
U-10 (Approx. 10 pcs per lb) Our Jumbo sized scallop for a truly impressive presentation.
U-15 (Approx. 15 pcs per lb) A larger scallop that is a main dish or an appetizer.
10-20 (Approx. 10-20 pcs per lb) perfect for stuffed scallops, bacon wrapped scallops, or any full sized scallop dinner.
20-30 (Approx. 20-30 pcs per lb) this size is great for scallop casseroles, fried scallop rolls and dinners, Very economical for pieces per pound.
Scallop pieces: After we grade them these are what is left over. Perfect for stews, chowders, or pizza (Scallop, Bacon, Alfredo pizza is amazing), or anytime you don’t need a full sized scallop.
STORING: This is a fresh fish and we recommend cooking within 48 hours of arrival. If you are waiting longer than 48 hours we suggest freezing it immediately after delivery to ensure freshness. Before freezing we suggest removing the scallops from the bag and patting dry Then place it in a vacuum sealed bag or double saran wrapped and place in Ziploc before freezing. Preferred way to defrost is overnight in refrigerator. For a quicker solution, in a sealed bag put them in a large bowl under cold running water. Move the bag around the bowl every so often until the scallops have defrosted, anywhere from 10-30 minutes.
